Vegan Banana Cupcakes with Chocolate Ganache

Round two for Easter desserts included these healthy and delicious banana cupcakes which I found courtesy of one of my favorite blogs. And rather than using the frosting, I opted for a glossy ganache. The downside was my ganache didn’t have the consistency and gloss I was going for. However, using the garnishes helped with this!


– 3 ripe bananas, mashed
– 2 c flour
– 1/4 c canola oil
– 1 c white sugar
– 1 c almond milk
– 1 Tbls baking powder
– 1 tsp salt
– 1/2 tsp cinnamon
– 1 1/2 tsp vanilla extract
– 1 tsp apple cider

1. In one bowl, use a hand mixer to blend the oil, milk, vanilla and apple cider
2. In a separate bowl, mash the bananas and sugar
3. Add the sugary mashed bananas to the oil mixture, use the hand mixer to get everything extra smooth
4. And in a third bowl, whisk together the dry ingredients. Fold the wet ingredients into the dry. Yields about 18 cupcakes

Chocolate Ganache
– 1/3 c almond milk
– 1/3 c semisweet chocolate chips
– 2 Tbls maple syrup

1. Bring almond milk to a boil, add the chips and syrup, stir until smooth
2. Remove from heat and let sit for several minutes, until thick and glossy
3. Dip the cupcakes into the ganache, top with desired treats. I used dried bananas and walnuts


Dulce de Leche Cupcakes


My friend recently asked me to make him a tres leches cake and while I normally could do so, I was missing the main ingredients. Instead I created sinful dulce de leche cupcake with a salted butter caramel glaze. Some of my best creations come from improvising. These cupcakes turned out great!


– 1 1/4 c flour
– 1 tsp baking powder
– 1/4 tsp baking soda
– 1/2 tsp salt
– 1/2 c sugar
– 1/4 c packed light brown sugar
– 1/3 c oil
– 1 c non-dairy milk
– 2 tsp vanilla
– 1 tsp grated lemon zest

For the glaze
– 1/2 c non-dairy milk
– 1 Tbls cornstarch
– 1/4 c brown sugar
– 1 Tbls butter
– 1/4 c maple syrup
– 1/2 tsp caramel extract
– coarse sea salt

1. Preheat oven to 350F
2. Sift together dry ingredients
3. Beat together wet ingredients
4. Create a well in the dry ingredents, pour wet into dry and stir until everything is mixed together
5. Pour into 12 cupcake liners, bake for 22-24 minutes
6. While cupcakes are baking, create the glaze by heating milk and cornstarch, stirring well
7. Once mixture simmers, add brown sugar and butter. When this thickens, add maple syrup and extract
8. Let cupcakes fully cool before adding the sweet and sticky glaze. Top with a few sprinkles of course sea salt

Jelly Donut Cupcakes

My friend asked me to bake something for her church bake sale and I thought Isa’s Jelly Donut Cupcakes would be a perfect treat. I had never made them before, so there’s always a risk in how they’ll turn out. Isa’s recipe recommends they sit out for at least 24 hours. Well, I made it about 24 minutes before sampling one. That’s not too bad, right? The only thing I could’ve done better is add more filling. Other than that, these are great. I suggest you go out and buy a copy of Veganomicon so you can get this recipe, along with hundreds of other must try eats.

350 Degrees of Holiday Fun

As a participant of Christmas, it’s hard to believe the holiday is only four days away. Yeesh. Luckily I finished the majority of my holiday shopping weeks before Thanksgiving. I don’t have anything left, unless it’s random ideas (which I’d name, but my dad is a reader of my blog and I can’t give any hints away yet!)

I have a work holiday party tonight and wanted to make some festive treats. Since I work at a coffee shop, I chose to make Isa’s Chai Latte cupcakes. I also made Isa’s Chocolate Crinkles, but renamed them Mint Mocha Crinkles to fit the theme.


I got creative for the cupcakes and cut out stencils. I used a 4×4 piece of paper, traced an oversized outline of the cupcake and cut this out…

Then with the circle, I drew a shape and cut the shape out…

After sprinkling with powdered sugar, here is what I got:

I also did Christmas tree shapes

And now, to clean up…bleh

Isa Chandra Moskowitz does it again, her Dulce sin Leche cupcakes (Vegan Cupcakes Take Over the World) are a sinful treat. They are so dangerous that I am working on getting rid of the dozen I made right now. So if anyone is around St. Cloud, give me a jingle and I’ll deliver this extra special treat 😉
