Lentils are a wonderful staple and have a million and one uses. Today I used them as a base for taco filling. Here’s what I used…

  • 1 c dried lentils
  • 3 c water
  • 1 14.5 oz can of fire roasted tomatoes
  • 1 small can of fire roasted green chiles
  • 1/2 packet of taco seasoning
  • tortilla and fixings
  1. Add lentils to water and bring to a boil. Cover. Reduce to a simmer. Cook until nearly soft, about 15 minutes
  2. Drain lentils, return to pot. Add remaining ingredients, bring to a boil. Cover. Cook for about 10 minutes and then uncover and cook for about 5 more to reduce the amount of liquids
  3. Serve over tortilla, or in a taco salad, or with spanish rice. Whatever tickles your fancy!
