Zucchini Brownies

  • 2 cups grated zucchini
  • 2 tsp vanilla
  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1/2 cup light olive oil
  • 1 and 1/4 cup maple syrup
  • 1/4 cup cocoa
  • 1/4 tsp baking soda
  1. Preheat oven to 350 degrees
  2. Whisk together the dry ingredients
  3. Add the wet ingredients and mix
  4. Gently stir in the grated zucchini
  5. Pour into a greased and floured 9 x 13 inch pan, and bake for 25-30 minutes, testing with a toothpick
  6. Remove from oven and let cool before cutting into 24 squares
  7. Serve with your favorite vegan ice cream!
