Dinner for Six

Last night I decided to get busy in the kitchen. I invited a few friends over and shared two new dishes with them. I made a Mediterranean puff pastry pizza and a kale dish. I don’t have pictures, but the recipes are so simple, you can whip these up yourself in no time. Enjoy!

Puff Pastry Pizza

  • 1 pkg of puff pastry (thawed)
  • 2 c of yellow/red cherry tomatoes, sliced
  • 1 tsp. oil
  • 12 tsp. hummus (Holy Land, original)
  • 8 tsp. olive tapanade (I used a mediterranean mix from Byerly’s, but be careful some have cheese products in them!)
  • salt and pepper to taste
  1. Line a cookie sheet with parchment paper. Preheat oven to 425 F
  2. Cut the puff pastry into 8 squares (4 squares per sheet)
  3. Put sliced tomatoes in a bowl, drizzle with oil and add salt and pepper
  4. Spread 1 tsp of tapanade and 1 1/2 tsp of hummus on each square
  5. Add 9-12 tomatoes per square
  6. Bake for 20 min, serve hot or at room temp

(leftover shot from the next day!)

Greens with Cannellini, Seitan, Tomatoes and Onion

  • A couple bunches of kale
  • 1 pt of cherry tomatoes
  • garlic (1-2 cloves), minced
  • 1 onion, sliced into crescent moons
  • 8 oz pkg of Upton’s ground seitan
  • 1 can of cannellini beans (or any white bean)
  1. Separate leaves from stalks, add to a big pot and fill with water. Bring to a boil and simmer for 40-60 min
  2. While kale is simmering, saute onion. When onion is soft and translucent, add the seitan
  3. When kale is about done, in a separate pan, heat the tomatoes (whole) in olive oil. Cook until they begin to blister
  4. Add in onion/seitan mixture, then start transferring kale from bit pot to frying pan. Make sure you get as much water off as possible
  5. Let moisture cook down a little (10 min) and add olive oil if kale is looking dry. Continue to let water cook out (15-30 min)
  6. Add beans and garlic in at the last 5 min.

  1. First of all, why have I not tried hummus on a pizza? This sounds like a fantastic idea. And that it’s puff pastry — even better. I’m going to try these recipes as soon as possible. Sounds like you had a great time!

    • Haha, it’s okay! Hummus is definitely a nice, little twist. I loved how easy the recipe was too. Seriouly took me 15 minutes to get it all together and 20 in the oven. When they came out, it looked close to gourmet. I was very impressed. I just put a picture up, but it doesn’t do the food justice because it’s a leftovers shot. Oh well. Hope you like it 🙂
